Ingredients
1 box Red Velvet Cake Mix (any brand, I used Duncan Hines)
1/4 c unsalted butter (not margarine), softened
8 oz cream cheese, softened
Preparation
Preheat Oven: Set the oven to 350°F. Line a baking sheet with parchment paper.
Mix Ingredients: In a large bowl, combine the butter and cream cheese with a mixer. Mix until it is creamed together and there are no visible lumps.
Mix in Cake Mix: Mix in cake mix until just combined. You may need to knead the dough by hand at the end so it all mixes together.
Roll and Cut: Roll out dough to 1/4-3/16 inch thick and use a cookie cutter to cut out shapes. Gather leftover dough, knead back together and continue cutting out cookies. Place about 1/2 inch apart on a cookie sheet.
Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the edges are set and the tops are no longer glossy.
Cool: Remove from the oven and allow the cookies to cool on the baking sheet completely before transferring them to a wire rack to cool completely.
For added flavor, consider folding in white chocolate chips or topping the cooled cookies with cream cheese frosting.
