Why do scientists make the best bakers? Join in our discussion of the Science of Baking.

It is fascinating to me how many scientists make fantastic bakers.  I, myself work in the healthcare field which he would consider a science career.  I worked and our radiology department in and after thinking about how many similarities baking has with science, I realize that it makes perfect sense that scientists make the best bakers; aside from the fact that we love to eat! Lets look at the science of baking below.


Measurements

For starters the science-like precision in measurements is extremely important for baking six techs.  Accurate measurements of ingredients are crucial and baking to ensure consistent results.  Scientists understand how important it is to be precise with measurements and can apply this skill when measuring ingredients. 


For myself, when I am baking cookies for others, I always weigh my ingredients using a kitchen scale. Side note: Using clear bowls on top of the scale will allow you to see the scale screen better(the small bowls I like / big bowl I like).  I find that I get a much more consistent result.  When we measure using measuring cups and measuring spoons, the amount in the measuring device can vary depending on the technique of filling the measuring cup.

Actions and Reactions

In other similarity is the understanding of chemical reactions.  Baking essentially is a series of chemical reactions.  That’s why when you bake a cake that cake and the taller than the amount of batter poured in.  Or why you shouldn’t completely fill up a cupcake pan when making cupcakes.  Knowledge regarding ingredients and the reactions needed for baked goods allows bakers to manipulate the outcomes of their baking.


Experimenting

Scientists are known for their experiments and baking often involves experimentation.  You can follow a recipe but sometimes recipes need changed up due to desiring a different outcome,  geographical locations/elevation or availability of ingredients.


Experimenting involves some trial and error most of the time.  When you have a challenge such as a flat cake or dry cookies, scientists can apply analytical thinking to figure out a solution to the problem.  Whether it’s adjusting oven temperatures, tweaking ingredient ratios or modifying mixing techniques, scientists approached baking challenges with an experimental system in mind.


Timing

I find it’s similar to the field of radiology and that the exposure time is one of the most crucial

things when exposing a patient to x-rays.  Too long of an exposure will cause your image to be very dark, or burned out.  Just like baking something for too long will cause it to burn. Adjusting x-ray controls and adjusting oven temperature is also similar. You can’t just crank the oven up and shorten your amount of time for baking; you have to get both techniques just right.

Recently I started using a new recipe four my decorating cookies.  I sell a lot of my baked goods and so I wanted to experiment with different techniques before I offered this item to my customers. 


Experiment Execution

I actually created an experiment sheet just like a science class.  I stated what the constants were going to be within the experiment and made a long list of all of the variables I wanted to test.  I divided it into two batches, in which I changed one factor only.  I tested all the variables against each other.  This resulted in me being much more confident about offering this new item to my customers, and I know exactly how this I recipe will act and react to different things.
